Wild Garlic Pesto

On of our absolute favourites here at Glendoick, Trotter's WIld Garlic Pesto is a treat not to be missed. 

Byam Trotter, owner of Trotter's Independent Condiments created his Foraged Wild Garlic Pesto using the Genoese classic recipe but with a twist... he uses local Scottish ingredients.

The basil and garlic has been replaced with fresh wild garlic bulbs and leaves, that Byam harvests locally. His wild garlic is picked no more than 2hrs before it's turned into pesto.

Olive oil has been substituted for Summer Harvest Rapeseed Oil that is again produced nearby in Crieff, Perthshire. Instead of Parmesan cheese, Byam uses Anster Cheese, a traditional hard cheese that produced 3 miles from his kitchen in Fife.

Bright emerald green in colour with flecks of crushed walnut and Anster cheese, Trotter's Wild Garlic Pesto is fresh, lively and so addictive.

Super Easy Recipe Idea!

  • 500g spaghetti
  • 6 tblsp of Wild Garlic Pesto 
  • 3 handfuls fresh rocket

Cook the spaghetti as per pack instructions, drain and stir in the pesto.  Top with rocket leaves & enjoy!
