Job Description

 

Kitchen Responsibilities

 

-         You are in charge of the kitchen and responsible for the smooth running of it and its staff.

-         When not present you must leave instructions to ensure the continued smooth running of the restaurant, including but not limited to orders to be made, food to be made up, cleaning to be carried out etc.

-         Planning menus in collaboration with management and other members of your team, taking into account seasons, ease of recipe, costs and timings.

-         Ordering on a daily, weekly and monthly basis ingredients and stock that are necessary for you and your team to carry out their work.

-         Ensuring that stock is taken before ordering and that stock is turned so that older food is used first.

-         Ensuring on a daily basis the chiller and fridges have in-date food. Instructing your team that all out of date must be thrown away and the wastage book filled in daily.

-         Cooking and prepping food for the day and for subsequent days as required.

-         Writing and making sure staff follow recipes for soups.

-         Ensuring at all times that food is available to the customer and that if a reduced menu needs to happen that you clear this with your immediate superior.

-         Taking temperatures of all hot food before it is served and marking it down on appropriate form and ensuring that your staff does the same.

-         Making sufficient food up for menus and sandwiches.

-         Ensuring all food is in date whether dry or fresh or stored in whichever area within the kitchen’s area of responsibility.

-         Taking daily temperatures of the chiller, fridges and freezers and marking on appropriate form.

-         Checking orders that come in are correct and marking down receipt on appropriate form.

-         Following up any orders with the supplier that are mistaken

-         Running a cleaning rota for chiller, fridges, freezers, tabletops, ovens, hobs, microwaves etc that ensures that your kitchen and equipment is cleaned on a daily or weekly basis.

 

When taking overall charge of the restaurant in the absence of the Restaurant Manager or Assistant Manager, your duties will include but are not necessarily limited to:

 

-         Overseeing, management and delegation of duties to all staff

-         Ensuring the front is set up, staffed adequately and running smoothly

-         Ensuring tables are cleared and cleaned during busy periods

-         Ensuring prepping and cooking in the kitchen is running smoothly

-         Ensuring dishwashing is keeping pace during busy periods

-         Overseeing all Health & Safety issues

-         Ensuring orders with all suppliers are up to date

-         Cashing up and closing down the restaurant

-         Dealing with customer complaints if necessary

-         Ensuring the safe, efficient & effective running of the restaurant at all times

1. From April  Full time position, nursery worker.    NOW FILLED

To replace retiring worker.

Principal Tasks  Digging and packing plants for mail order, watering, feeding and spraying growing stock, cuttings (preparation and planting), weeding, transplanting of cuttings, seedlings, and plants for sale, making up nursery beds, planting out stock, potting on liners and indoor grown stock into larger containers, general gardening and maintenance including clearing gutters, mowing.  

Hours 40 hours in summer week 8-4.30pm with a 1/2 hour lunch break, with occasional weekend watering if required which is paid at an overtime rate. 35 hours for 13 weeks in winter November to early February.

 All positions at Glendoick are for a 3 month trial period after which either party may decide to discontinue the employment.  

Holiday allowance is 29 days per year, (25 days plus 4 statutory days). We normally do not allow holidays to be taken in March or 10th-end October as these are our busiest months.

2. Temporary summer nursery worker  from March to August.   NOW FILLED

3. Glendoick Restaurant and Food Library Part time bookkeeper and office worker   NOW FILLED

8-10 hours per week. There may be more hours available in retailing and running EPOS system, if required. 

 Immediate start.  Hours of work flexible but will be on Tuesday/Wednesday or Thursday. Good knowledge of SAGE accounting software required. Operate promote and efficient paying of bills, balancing daily takings, supply of change (from local post office) and occasional banking. Progamming EPOS system, opening and sorting mail and faxes, writing letters, dealing with complaints and requests for help from local schools and charities.
